Honey-Glazed Salmon

2 tablespoons minced shallots
1 tablespoon chopped fresh or 1 teaspoon dried thyme
3 tablespoons honey
1 tablespoon Dijon mustard
½ teaspoon salt
¼ teaspoon ground red pepper
4 6-ounce salmon fillets (about 1 inch thick)
Cooking spray
Thyme sprigs (optional)

1. Prepare grill
2. Combine 1st six ingredients in a small bowl
3. Brush honey mixture over skinless side of fish
4. Place fish on a grill rack or broiler pan coated with cooking spray and cook 6 minutes on each side or until the fish flakes easily when tested with a fork
5. Garnish with thyme sprigs, if desired
