Hummus

4 garlic cloves
1 teaspoon sea salt, or kosher salt
Two 1-lb 3-oz cans of chick peas, drained and rinsed
¼ cup fresh lemon juice
¼ cup olive oil
½ cup water
¼ cup tahini*

On a cutting board mince and mash the garlic to a paste with the salt. In a food processor purée the chick peas, garlic paste, lemon juice, oil, water and tahini* (optional). Add more water, salt, and lemon juice to desired taste and consistency. Best if refrigerated for several hours before serving.

* similar to peanut butter – only made with sesame seeds instead of peanuts
