Carrots Lyonnaise

This recipe has such great color and the flavor is delicious! It has become one of our favorite side dishes.

½ onion, thinly sliced
4 tablespoons butter
2 pounds carrots, pared and cut into 2 inch sticks
¾ teaspoon lemon pepper seasoning
¼ teaspoon salt
¼ cup finely chopped parsley

Sauté onions in 3 tablespoons butter until tender and golden. Remove onions. Keep warm. Add remaining tablespoon butter to the same skillet. Stir in carrots. Cover and reduce heat. Simmer 15 minutes or until tender. Uncover. Cook until liquid is gone. Season with lemon pepper and salt. Lightly toss in onions and parsley.
