At every church pot luck growing up, one of my grandmother's oldest and dearest friends, Do Myers, would make this cake. It's basically an apple pound cake. Always my favorite dessert at the potluck, I would have at least one (or two) slices. I have no idea why it is called "Jewish" apple cake. It's basically an Pennsylvania Dutch standard. Delicious.
3 cups apples (about 5-6 medium)
2 teaspoons cinnamon
5 tablespoons sugar
Peel & core apples & cut in cubes. Sprinkle with the sugar & cinnamon & set aside.
Beat together until smooth:
3 cups flour
2 cups sugar
1 cup vegetable oil
¼ cup orange juice
4 eggs
1 tablespoon baking powder
2 ½ teaspoons vanilla
1 teaspoon salt
Pour half of the batter into a greased tube pan. Arrange ½ of apples, then the remaining batter with the rest of the apples on top. Bake at 350° for 1 ½ hours. Cool 20 minutes and remove from pan.
