A good friend and former Nielsen work collegue gave me this recipe back in 2000. It is the potato side dish that we most often make. Also works well to use both red and gold potatoes at the same time (gives the dish nice color).
5 red potatoes
¼ cup olive oil
Salt, pepper, paprika and seasoning salt (Lawry's)
Preheat oven to 350°. Rinse and scrub potatoes. Dice with skins on. Rinse again. Toss with olive oil. Add salt, pepper, paprika and salt to taste. Toss again. Spread on baking sheet and cover with foil. Bake for 40 minutes. Remove foil and broil for 5-10 minutes more.
