On our 5th anniversary, Mike & I traveled to Niagara Falls and Toronto, Canada. On the way home, we got off the main road to visit White Meadows Farm. It was here that we picked up a bottle of their "light grade" maple syrup. I've never been a big fan of "real" maple syrup (maybe just too much Mrs. Butterworth's as a child). I always found the flavor to be too pungent. Until this trip, I didn't realize that there are actually several grades of real maple syrup. It's similar to how there are different grades of olive oil, depending on what press the oil is coming from. Grade A light maple syrup has a very delicate flavor. It's usually made early in the season when the weather is still cool. And let me tell you, this syrup is good! We've since tried a few brands of light maple syrup (it's a bit harder to find than it's "dark grade" counterpart). But, our favorite is still the syrup from White Meadows. Maybe we're just sentimental.
