My mom's yummy quiche recipe. She made this a lot when I was growing up. And she also served this at my baby shower a few years ago. Sometimes she would adapt the recipe for mini-quiches; great for hors d'œuvres.
4 eggs
1 cup half and half
½ cup mayo
2 tablespoons flour
½ teaspoon salt
¼ teaspoon garlic powder
1/3 cup chopped onion
8 ounces shredded cheese (sharp Cheddar or Swiss)
1 (10 oz.) package frozen chopped spinach, thawed & drained
1 pie crust
Blend eggs, half and half, flour, salt and garlic powder in a blender. Fill pie shell with cheese, onion and spinach. Pour blender mixture over ingredients in pie shell. Bake at 350° for 45 minutes to 1 hour.
