Aunt Jo Ann’s Favorite Sugar Cookies

From: Whitney Bisgaard

Cookie Dough:
3/4 cup shortening
1 cup white sugar
2 eggs
1 tsp. vanilla
1 tsp. baking powder
1 tsp. salt
2 1/2 cups all-purpose flour

Cream shortening and sugar. Add eggs and vanilla and mix well. Combine baking powder, salt and flour and mix well. Slowly add to creamed mixture and beat until smooth.

Bake on greased cookie sheet at 400 degrees for 6 to 8 minutes. DO NOT OVERBAKE—tops will turn shiny when ready.

Frosting:
3 cups powdered sugar
½ cup unsalted butter (don’t use margarine)
1 teaspoon vanilla
1 small can evaporated milk (you will use a few teaspoons)
Food coloring (if desired)

Combine above ingredients and whip until fluffy. Add evaporated milk by the teaspoon to achieve desired consistency.
