Batter:
2 cups sugar
3 cups flour
2 cups cold water
6 tablespoons cocoa
2/3 cup oil
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla
2 teaspoons white vinegar
Cream cheese filling:
1 package cream cheese (8 oz.)
1 egg
1/3 cup white sugar
6 ounces chocolate chips
Mix first group of ingredients well. Line muffin tin with cupcake papers. Fill cupcake papers half full. Blend second group of ingredients and then stir-in chocolate chips. Place 1 tablespoon of filling in each cupcake (or until 2/3 cup full of batter). Bake at 350° degrees F for 25 minutes. Store cupcakes in the refrigerator.
