Baking Powder Biscuits

From: Betty Crocker’s New Cookbook

I didn't really grow up eating biscuits, but came across this recipe in Betty Crocker's cookbook a few years back and now I make them all the time. Mike LOVES to have these for breakfast. They have become a favorite on Saturday mornings. So good with butter and jam.

½ cup shortening
2 cups all-purpose flour
1 tablespoon sugar
3 teaspoons baking powder
1 teaspoon salt
¾ cup milk

1. Heat oven to 450°
2. Cut shortening into flour, sugar, baking powder and salt into medium bowl, using a pastry blender or 2 knives, until mixture looks like fine crumbs. Stir in milk until dough leaves sides of bowl (dough will be soft and sticky).
3. Turn dough onto lightly floured surface. Knead lightly 10 times. Roll or pat ½ inch thick. Cut with floured 2 ½ inch round cutter. Place on ungreased cookie sheet about 1 inch apart for crusty sides, touching for soft sides.
4. Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

(Add a bit of extra flavor to your biscuits by stirring in 2 teaspoons chopped fresh or ¾ teaspoon dried dill weed or basil with the flour.)
