Butterscotch Brownies

Another taste of childhood. Catching a waft of these baking in the oven brings it all back. Bar cookies are great because they are fast and easy. My mom likes the crust around the edge on these - but I like the chewy center part.

1 cup vegetable oil
2 cups light brown sugar
2 eggs
1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla

Preheat oven to 350°. Blend oil, sugar and eggs. Mix flour, baking powder and salt and add to the wet ingredients a little at a time. Add vanilla and mix well.

Bake for 25-30 minutes in a greased and floured 9 x 13 pan.
