3 eggs
2 cups milk
3 cups four
¼ cup sugar
½ teaspoon salt
2 teaspoon baking powder
Vegetable oil for frying (about 3 cups)
Confectioners’ sugar for dusting
Mix all ingredients (eggs through baking powder) until smooth. Heat oil in a stockpot until bubbly. Spoon ½ cup of batter into the oil. Flip when lightly brown on the bottom. Lightly brown other side. Remove funnel cake from oil and place on a paper towel topped plate. Dust with confectioners’ sugar. Serve immediately.
