Gjetost (pronounced ‘yet-oast’) is a Norwegian cheese with a fudgy texture and a sweet, caramel-like flavor. It is made from a combination of milk, cream and whey. We always ate this cheese at Christmastime (about the only Norwegian thing my family did - my Dad is 1/2 Norwegian). It's delicious plain or on toast. Best if sliced very thin.
