Corn Bread

This bread is quick and easy. Besides the buttermilk, you're likely to have most of the ingredients in your pantry. Great with chicken tortilla soup, chili or BBQ!

Prep: Grease bottom of 8x8 pan. Preheat oven to 350°

Mix:
1/2 cup unsalted butter, melted
2/3 cup white sugar
2 eggs
1 cup buttermilk

Mix separately:
1 cup cornmeal
1 cup flour
1/2 tsp. baking soda
1/2 tsp. salt

Combine both mixtures and stir just until mixed. Pour mix into pan and bake at 350° for about 30 minutes. It's done when it the edges are brown.

A doubled recipe fits perfectly in a 9x13 pan.
