Forgotten Cookies

These are called "forgotten" cookies because you are supposed to "forget" about them when they are drying out in the oven. Another cookie that represents Christmastime for me. As I kid, I could probably eat a dozen or so at one sitting. Growing up my mom would always make these cookies along with "Mom's Butter Cookies" [see below] because the butter cookies only call for egg YOLKS (so you're not wasting any eggs).

4 egg whites
1 ¼ cups white sugar
1 teaspoon vanilla
¼ teaspoon salt

Preheat oven to 325°

Beat whites until stiff peaks form (if there is a trace of yolk, peaks will not form so take care when separating).

Gradually add sugar, then salt, then vanilla.

Drop 2 tablespoons batter per cookie onto very well greased cookie sheets. Place cookie sheets into the oven and then turn the heat off. Leave cookies in the oven overnight to harden.
