As a kid, these cookies were one of my favorites - as I think they are for a lot of kids. Soft and chewy, with that just right flavor of cinnamon and sugar on the outside. Yum!
½ cup margarine
½ cup unsalted butter
1 ½ cup sugar + 3 tablespoons for rolling dough balls
2 eggs
2 ¾ cup flour
2 teaspoon cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
3 teaspoons cinnamon
1. Preheat oven to 325°. Grease cookie sheets or use a Silpat.
2. Blend margarine, butter and 1 ½ cups sugar. Mix in eggs.
3. In a separate bowl, mix flour, cream of tartar, baking soda & salt. Mix dry ingredients into wet ingredients.
4. Form the dough into balls
5. Mix the 3 teaspoons cinnamon with the 3 tablespoons sugar in a small bowl.
6. Roll each dough ball into the cinnamon & sugar mixture.
7. Bake for 8-12 minutes.
Yield: About 24 cookies
