Jelly Roll

Another favorite treat that grandma (and my mom) used to make when I was a kid. I love the way the sponge cake soaks up the jelly. Yum!

4 large eggs
1 cup sugar
Grated rind of 1 lemon OR 1 teaspoon vanilla extract
2 tablespoons cold water
1 cup sifted flour
1 teaspoon baking powder
Pinch of salt
1 cup confectioners’ sugar (approximately)
8-10 oz. jelly (grape works well)

Beat eggs & sugar until thick. Add lemon rind (or vanilla) and water. Add sifted flour, baking powder & salt. Grease a 12” x 17” jelly roll pan, line it with wax paper and grease again. Pour batter into prepared pan and bake at 350-375 degrees for about 10 minutes. When done, turn onto a dishcloth sprinkled heavily with confectioners’ sugar. Remove wax paper. Trim edges. Roll up in cloth until cooled. Unroll and add jelly. Roll back up in towel to keep shape.
