Weeknight Chili

Very good served over rice with a side of cornbread!

1 pound ground beef or ground turkey
1 package chili seasoning mix (1 1/4 oz)
1 (14oz) can diced tomatoes with green chilis, undrained
1 (15 oz) can red kidney beans, rinsed and drained
1 (8 oz) can tomato sauce
1 cup shredded Cheddar cheese
Chopped green onions (optional)

1. Brown ground beef in large skillet, stirring to break up meat; drain fat. Stir in seasoning mix.

2. Place beef, tomatoes, beans and tomato sauce in 4 1/2-quart crock pot. Stir to combine. Cover and cook on low 4-6 hours or on high 2-3 hours. Top each serving with cheese and green onions.

Makes 4 servings.
