Yam Bake

This is one of my favorite holiday dishes of Thanksgiving. My step-mom, Janice, makes it every year. It's very sweet and rich.

Whip together until well blended, then put into a greased 9 x 13 baking dish:

2 (2 lb.) cans yams
1 egg
1/2 stick (1/4 cup) butter, melted
½ cup white sugar
1 teaspoon cinnamon
1 teaspoon vanilla

Mix together until crumbly, then put mixture on top of yams:

2 sleeves crushed Ritz crackers
1 stick (1/2 cup) butter, melted
½ cup brown sugar
1/3 cup white sugar
2 teaspoons cinnamon

Preheat oven to 350°. Cover baking dish with aluminum foil. Bake for about 20-25 minutes. Remove foil and bake uncovered for 5-10 minutes more, or until mixture is golden brown on top.
