This was often made by my cousin, Rose Marie, for holiday dinners. It is delicious! It tastes like an apricot mousse.
One 3 oz. apricot Jell-O
1 large can mandarin oranges, drained (11 oz.)
1 large can apricots, drain and reserve liquid (15.25 oz.)
One 8 oz. package cream cheese, softened
One 8 oz. container Cool Whip
Maraschino cherries
1. Measure reserved apricot juice. If there is less than 1 cup, add water to equal 1 cup
2. Boil apricot juice
3. Dissolve Jell-O into juice
4. Cool 5 minutes
5. Blend apricots and cream cheese in a blender or food processor
6. Add Jell-O mixture
7. Blend in Cool Whip
8. Stir in oranges
9. Put into serving bowl and dot with Maraschino cherries
